Easy as Pie Vegetable Pie

One of my favorite things about the holidays is… endless amounts of pie options! I don’t know about you guys but I seriously LOVE pie.

Another one of my favorite things is pie I can eat all year round and here’s one of my favorites:

Vegetable Pie

Prep Time: 10-15 minutes

Servings: 4-6

Ingredients

2 Cups chopped broccoli, sliced cauliflowers

3 pieces of chicken sausage

1/3 chopped onion

½ cup red bell pepper (or your favorite type of pepper)

1 cup cheese of your choice

½ cup Original Bisquik (or pancake) mix

1 cup almond milk

2 eggs

Sprinkle of Salt and Pepper

How to make it:

  1. Grease a 9-inch pie plate, heat oven to 400 degrees
  2. Chop up veggies and sausage, place broccoli and cauliflower in a bowl with 1 tablespoon of water, heat in microwave for about 1:30. Drain water
  3. Pour eggs, Bisquik Mix and almond milk into a bowl, stir or blend. Pour into pie plate
  4. Sprinkle veggies, chicken sausage and cheese on top
  5. Bake for about 30-45 minutes or until pie edge is golden-brown and knife inserted into center comes out clean.
  6. Cool and serve

*NOTE: Substitutions and additions can be made based on personal preference/ allergies*
